Butterscotch Brownies are one of the simplest bar cookie recipes to make from scratch. The bars call for just 7 ingredients – 8 if you add nuts at the end.
They are a classic bar cookie that resemble chocolate brownies. Yet instead of cocoa or melted chocolate for flavor, the bars call for brown sugar. The result is a rich butterscotch flavor and dense texture, particularly if you add the optional nuts.
As far as terminology goes, the bars are also called “blond brownies,” “blondies,” or “white chocolate brownies,” although the last term is a misnomer since these bar cookies typically do not call for any kind of chocolate in the dough.

1 cup packed brown sugar
1 egg
¾ cup flour
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon vanilla extract
